Vegan Raffaello

Just 3-ingredients and no baking. These vegan coconut balls couldn’t be any easier to make! A wonderful substitute for Raffaello Bonbons – perfect for gifting… or just eating yourself.

Hands up if you could chow down on an entire box of Raffaello like me! Those little balls of coconut and almond used to fill my world with so much joy. I was always a Raffaello over Ferrero kind gal.

So, when they popped into my head again just recently, I knew I had to try a vegan version. Sweetened condensed coconut milk, desiccated coconut and almonds… I knew this combination was going to be delicious, but I didn’t think the taste would be so bang on. Such a wonderfully easy cheat’s Raffaello!

They are so easy to make, simply mix in a bowl and then roll into balls. Couldn’t get any simpler, could it?

I made mine quite large – a tablespoon of mixture each ball – but you can definitely make them a little smaller to yield more balls. But you’ll need to more almonds if making them smaller, of course!

Vegan Raffaello

3-Ingredient Vegan Coconut Balls | Homemade Raffaello

Ingredients
  

  • 320 grams Sweetened Condensed Coconut Milk
  • 2 1/2 cups Desiccated Coconut
  • 16 Blanched Almonds

Instructions
 

  • To a large mixing bowl add condensed milk and 2 cups of desiccated coconut. Combine everything well.
  • On a large flat surface spread out the remaining 1/2 cup of desiccated coconut.
  • Scoop out a tablespoon of the mixture from the bowl and roll into a ball. In the center of the ball place one blanched almond. Note: it will be sticky, and a bit messy at this point.
  • Roll this ball in the desiccated coconut you laid out on the flat surface until totally covered and no longer sticky on the outside.
  • Repeat until all the mixture has gone then place in the fridge to set completely.
