Vegan Rocky Road

Crunchy biscuits and nuts, chewy marshmallow and cherries, all topped with lots of lovely dark chocolate – the perfect tea-time treat!

Sometimes you just need a quick little treat, right? Something you can whip up in next to no time at all. But also something that will satisfy your craving for something rich and sweet at the same time. This, dear reader, is that kind of treat.

This vegan rocky road is incredibly more-ish. Like you have one square, then you have two, then three… and before you know it you’ve eaten the entire slab. I’m not at all speaking from experience.

It’s just the ideal combination of flavours and textures. You’ve got the squidginess (is that a word?) of the marshmallows, the chewiness of the cherries, the crunch of the biscuits and the nuts. Oh, it’s a beautiful thing!

It is also the perfect little make for younger kids too. Something you can have them help out with in the kitchen. There are biscuits to smash, marshmallows to mix through and lots of opportunity to get a little bit messy. Perfection!

Vegan Rocky Road

Ingredients
  

  • 200 grams Dark Chocolate
  • 120 grams Vegan Butter
  • 3 tbsp Maple Syrup
  • 150 grams Rich Tea Biscuits roughly crushed
  • 70 grams Vegan Marshmallows roughly chopped
  • 80 grams Glace Cherries roughly chopped
  • 50 grams Mixed Nuts roughly chopped

Instructions
 

  • Line a 10" x 8" brownie tin with baking paper
  • Place a large glass bowl over a shallow pot of simmering water.
  • Add the dark chocolate, butter, and maple syrup – stirring until it's all melted and silky smooth.
  • Remove the glass bowl from the pot and stir through the biscuits, marshmallows, cherries and mixed nuts until everything is coated in the chocolate mixture. 
  • Spoon the mix into the lined brownie tin and then place in the fridge to cool for at least two hours. 
  • Cut into 12 squares and enjoy! Be sure to keep refrigerated at all times for maximum tastiness.
