Vegan Rocky Road
Crunchy biscuits and nuts, chewy marshmallow and cherries, all topped with lots of lovely dark chocolate - the perfect tea-time treat!

- 200 grams Dark Chocolate
- 120 grams Vegan Butter
- 3 tbsp Maple Syrup
- 150 grams Rich Tea Biscuits roughly crushed
- 70 grams Vegan Marshmallows roughly chopped
- 80 grams Glace Cherries roughly chopped
- 50 grams Mixed Nuts roughly chopped
Line a 10" x 8" brownie tin with baking paper
Place a large glass bowl over a shallow pot of simmering water.
Add the dark chocolate, butter, and maple syrup - stirring until it's all melted and silky smooth.
Remove the glass bowl from the pot and stir through the biscuits, marshmallows, cherries and mixed nuts until everything is coated in the chocolate mixture.
Spoon the mix into the lined brownie tin and then place in the fridge to cool for at least two hours.
Cut into 12 squares and enjoy! Be sure to keep refrigerated at all times for maximum tastiness.
