Vegan Cauliflower Cheese

Vegan Cauliflower Cheese. All my prayers have been answered! This has been one of those recipes that has been on my to-do list for a looooong time. It was always one of my favourite dinners before I went vegan, so the fact that I’m only getting to it now is, frankly, a bit of a disgrace! Tut tut, me.

Cauliflower Cheese is just one of those dishes that just makes you feel good inside. Pure comfort food! We served it up with a little crispy kale and glazed tofu, but it’s perfect served as part of a roast dinner. Honestly, it’s good eaten just about any way you want to. Heck, just a plate of this on it’s own would make me happy!

The sauce is smooth, creamy, and deceptively cheesy. I’m pretty certain even your non-vegan friends and family won’t know the difference! I add a little extra cheese into the sauce, but this is totally optional. The dish is still cheesy without it.

The pistachio crumb on top the best way to finish it all off. They add a lovely toasty, nuttiness plus a bit of a crunch that pairs beautifully with the soft, creamy cauliflower. So heavenly!

This recipe is fairly basic, needing just butter, flour, almond milk, nutritional yeast, and optional vegan cheese. So simple! It serves 4-6 people depending on your portion sizes and can be made ahead of time if required. If making ahead, I’d just recommend leaving the baking part of the recipe until you’re ready to serve.

Vegan Cauliflower Cheese

Vegan Cauliflower Cheese with Pistachio Crumb

Ingredients
  

  • 1 Large Cauliflower cut into florets
  • 1/4 cup Vegan Butter
  • 1/4 cup Plain Flour
  • 500 ml Almond Milk
  • 1/2 cup Nutritional Yeast
  • 1/4 cup Vegan Cheese (optional) I used grated vegan mozzarella
  • Salt & Pepper to season

Instructions
 

  • Bring a large pot of salted water to the boil. Once it reaches a rolling boil, add cauliflower florets. Boil for 5-7 minutes until tender – but not soft. Drain cauliflower, place in a baking dish and set aside for later.
  • In a saucepan over medium heat, melt the vegan butter.
  • Add flour then stir to combine well. Cook for 1 minute and then remove from the heat.
  • Gradually add the milk to the pan with butter and flour, stirring well between each addition. Once the milk has all been added, place back over a medium heat.
  • Add the nutritional yeast and the vegan cheese (if using), and continue stirring the mixture until it has thickened. This should take about 5 minutes.
  • Taste and season with salt and pepper.
  • Pour the cheese sauce over the cauliflower florets in a baking dish – make sure all the florets are covered well.
  • Sprinkle over additional vegan cheese if using followed by the roughly chopped pistachios.
  • Place in the oven and bake for 25-30 minutes or until bubbling and golden on top.
  • Remove from the oven and serve!
