Vegan Energy Balls

Interrupting regular scheduling to bring you something relatively healthy… what a surprise! These Vegan Energy Balls are the absolute perfect snack to help you combat those afternoon hunger pangs. Or even better as a little snack post-workout.

Who do I even think I am? Talking about exercise like I know how to do it!

To be completely honest, I’ve recently betrayed myself and succumbed to the odd workout from time to time. I’ve even been peeling myself straight out of bed at an ungodly time of the morning to take a run… (read: jog) a run! Around the park! WHO. AM. I.

Anyway, these wee jogs have really give me a bit of an appetite. Especially by mid-morning. Which is why I needed to find a snack that would stop me from reaching for a packet of biscuits.

I think these energy balls do the trick quite nicely. It has a lot of my favorite things – peanut butter, hazelnuts, dates – yum yum! They are super easy to throw together. Just blitz the ingredients together, roll into a ball and then leave to set in the fridge. Simple!

Vegan Energy Balls

Easy Vegan Energy Balls

The perfect healthy afternoon, or post-workout snack! Made with dates, oats, cacao nibs, peanut butter, and hazelnuts.
Course Snack
Servings 10 Balls

Ingredients
  

  • 1 Cup Dates
  • 1/2 Cup Rolled Oats
  • 1/4 Cup Hazelnuts
  • 1/4 Cup Cacao Nibs
  • 3 tbsp Peanut Butter
  • 1 tbsp Chia Seeds

Instructions
 

  • If dates are dried, place them in a bowl with warm water for 10 minutes to soften.
  • Drain the dates and place them in a food processor and blitz.
  • Add oats, hazelnuts, cacao nibs, peanut butter, and chia seeds to the food processor along with the dates – then blitz until everything is combined.
  • Take one tablespoon of the mixture and roll between the palm of your hands to form a ball. Repeat until all the mixture is gone.
  • Place the balls in the fridge to set.
