3-Ingredient Vegan Coconut Balls | Homemade Raffaello

Ingredients
  

  • 320 grams Sweetened Condensed Coconut Milk
  • 2 1/2 cups Desiccated Coconut
  • 16 Blanched Almonds

Method
 

  1. To a large mixing bowl add condensed milk and 2 cups of desiccated coconut. Combine everything well.
  2. On a large flat surface spread out the remaining 1/2 cup of desiccated coconut.
  3. Scoop out a tablespoon of the mixture from the bowl and roll into a ball. In the center of the ball place one blanched almond. Note: it will be sticky, and a bit messy at this point.
  4. Roll this ball in the desiccated coconut you laid out on the flat surface until totally covered and no longer sticky on the outside.
  5. Repeat until all the mixture has gone then place in the fridge to set completely.
