Vegan Anzac Biscuits

Anzac biscuits are one of those quintessentially Australian things – like Vegemite, meat pies, fairy bread, and a can of Fosters. Actually, just go ahead and strike that one completely. No self-respecting Australian drinks Fosters!

These biscuits were originally made to send to the ANZACs serving in Gallipoli – ANZAC being an anagram for the Australian and New Zealand Army Corps (woweeee, you can learn historical things on this blog too!). So, each year on Anzac Day – April 25 – these biscuits are aggressively made and eaten by most law-abiding Australians.

There are lots of thoughts on what the perfect Anzac biscuit should be – some like them crunchy, others chewy, some thin and crispy (not the pizza base!). I fall firmly in the chewy camp, so if you are offended by the very thought of a chewy Anzac biscuit, you should probably leave now because you’ll find no joy with this recipe!

While these biscuits might look very unassuming, I promise they are a flavour sensation! The golden syrup really shines through giving them oodles of sweetness (and also binding the biscuit together – such magic!), then you have the oats all toasted and delicious and LOTS of desiccated coconut.

Added bonus, a batch of Anzac biscuits can be whipped up in no time at all. It takes at most, perhaps 10 minutes to make the mixture and then just 8-10 minutes oven time. You probably can’t even get to the shop and back to buy biscuits from the store in that time! Unless you live at a shop. In which case, you most likely can.

Vegan Anzac Biscuits

Makes 12

Ingredients

100g Porridge Oats
100g Plain Flour
100g Desiccated Coconut
100g Caster Sugar
100g Vegan Butter
2 tbsp Golden Syrup
2 tbsp Water
1 tsp Bicarbonate of Soda

Method

  1. Preheat oven to 180 degrees celsius. Line a large baking tray.
  2. In a large bowl, mix together the porridge oats, flour, desiccated coconut and caster sugar.
  3. Melt the butter in a small saucepan over medium heat. Once melted, add the golden syrup and water mixing until combined. Then add bicarbonate of soda and stir everything together.
  4. Add the butter mix to the bowl with dry ingredients and combine well.
  5. Roll large tablespoons of the mixture into balls and place on a baking tray at least 5cm apart. Press the balls down until the biscuits are about 1cm thick.
  6. Place in oven and bake for about 8-10 minutes – or until golden.
  7. Allow to cool on the tray for a few minutes before moving to a wire rack to cool completely.
