Vegan Blueberry Bread

Every morning should start with blueberry bread baking in the oven… It is the business! I’m kind of a big fan of blueberries (shoutout to all those blueberry muffins out there – I see you, and I love you)… but you wouldn’t know it from this blog because there are NO blueberry recipes. Charles what now?

So, I think it is about time I rectify this situation. Enter this rather scrummy looking Blueberry Streusel Bread. It’s soft and fluffy, with pops of sweet blueberry juice and a crunchy, sugary streusel topping. It’s kind of what dreams are made of.

It’s honestly a breeze to make too. You’ll have the batter whipped up in about half an hour, and then all that’s left to do is sit and wait an hour for that baby to finish cooking up in the oven. Added bonus, you’ll be smelling that sweet blueberry scent wafting around your house for hours after. You’re welcome!

If you’re looking for a healthy bake, this probably isn’t it. But it does have oats in it, so that makes it kinda healthy… right? Go on, give it a go and let me know how you get on in the comments section.

Vegan Blueberry Streusel Bread

Ingredients

2 cups Plain Flour
1 cup Light Brown Sugar
1/2 cup Oats
2 tsp Baking Powder
1 cup Almond Milk
2 tsp Apple Cider Vinegar
1/2 cup Vegan Butter – melted
1/3 cup Applesauce
2 tsp Vanilla Extract
1 cup Blueberries
Pinch of Salt

Streusel Topping Ingredients:
1/4 cup Plain Flour
1/4 cup Light Brown Sugar
2 tbsp Vegan Butter

Method

  1. Preheat oven to 180 degrees celsius. Grease and line a 9×5 loaf tin.
  2. Make a vegan buttermilk by combining the cup of almond milk and apple cider vinegar in a jug. Set aside for 5-10 minutes.
  3. In a large mixing bowl, combine all dry ingredients – plain flour, oats, brown sugar, baking powder, and a pinch of salt.
  4. To the mixing bowl, add the buttermilk, melted butter, applesauce and vanilla extract. Combine everything together well until you have a nice batter.
  5. Fold the blueberries into the batter and then transfer the mixture into your lined loaf tin. Sprinkle a few extra blueberries on top if you desire.
  6. Make the streusel by combining the flour, sugar and butter in a bowl. I like to rub and pinch the mixture between my fingers to bring it to the right consistency.
  7. Sprinkle the streusel mixture over the top of the batter mixture in the tin.
  8. Place in the oven and cook for 60-75 minutes, or until a skewer placed in the middle comes out clean.
  9. Remove from oven and allow to cool in the tin for about 20 minutes before transferring to a wire rack to cool completely.
