Ingredients
  

  • 270 grams Cashews soaked overnight
  • 1 block Extra Firm Tofu drained
  • 2 tbsp Nutritional Yeast
  • 1 Garlic Clove minced
  • 1 tsp Sea Salt
  • 1/4 tsp Garlic Powder
  • Juice of 1 Lemon

Method
 

Soak Cashews
  1. If you haven't soaked your cashews in water overnight, there is a quicker method. Simply soak the cashews in boiling water for 10 minutes to achieve a similar result.
To make the Ricotta
  1. Add drained cashews and tofu to a blender along with the rest of the ingredients. Blitz all the ingredients together until you have a creamy consistency. Taste and season as desired.
  2. Store in an airtight container in the refrigerator.
