Vegan French Toast Bagel

This recipe came about when I really fancied some french toast but didn’t have any bread on hand. Spotting the trusty bagels tucked away in my cupboard, I though “a-ha! They’ll do!”. Little did I know they’d be an absolute bloomin’ treat!

Bagel french toast is THE BEST. It has jumped right to the front of my sweet breakfast favourites (everyone has a sweet breakfast and savoury breakfast list – right?). It’s super simple to whip together at the last minute. Plus, you’re pretty much guaranteed to have all the ingredients you need already in the cupboard.

Top the bagels off with whatever you fancy. My general go-to is blueberries, strawberries or bananas and some maple syrup with coconut cream. If I’m feeling extra fancy, I’ll throw on some candied walnuts.

Give it a go next time you have some bagels loitering in the depths of your cupboard.

Vegan French Toast Bagel

Recipe adapted from Minimalist Baker
Serves 2

Ingredients:
2 Bagels cut in half (make sure vegan-friendly!)
1 cup unsweetened almond milk
1 tablespoon chia seeds – I just used whole, but you can grind them up if preferred
1 tablespoon maple syrup
1 teaspoon vanilla extract
1/2 teaspoon cinnamon

For the Candied Walnuts

Ingredients:
1/2 cup of walnut halves
1 tablespoon butter
1 tablespoon maple syrup
2 tablespoons of brown sugar

Method:

  1. Mix the almond milk, chia seeds, maple syrup, vanilla extract and cinnamon in a bowl until combined. Place in the fridge for 20 minutes.
  2. Make the candied walnuts if desired. In a small saucepan, melt the butter and mix together with the brown sugar and maple syrup. Once combined, add the walnut halves and then mix well until all the walnuts are coated. Remove from heat and set aside until serving.
  3. To cook the bagels, heat up a frying pan or griddle over a medium heat and melt a tablespoon of butter
  4. Remove your milk mixture from the fridge. Soak each side of the bagel in the mixture for 30 seconds to a minute. (I like to leave the outer-side of the bagel soaking a little longer since it’s a little tougher than the inside.) 
  5. Place your bagel in the pan and fry each side for 4 minutes or until golden brown. Flip the bagel and repeat on the other side.
  6. Finish your bagel off with your topping of choice – and the candied walnuts if desired.
