It’s no secret, I’m quite partial to a good sandwich. Which I suppose is why it pained me so when I first chose the vegan lifestyle. I thought my sandwich eating days were over… what on earth would I spread between two fluffy slices of bread if not meat? (Note: this was also before I discovered the joy of vegan “meat” slices – so young, so naive!)

Yes, I’m dramatic. We’ve established this.

But it didn’t take me very long to discover the joy of a good chickpea sandwich. Oh boy. I’d eat a chickpea sandwich every single day for the rest of my life and be a very happy person. I’ve enjoyed a few variations of the chickpea sandwich – the ol’ favourite chickpea tuna, and my own variation on a Chickpea Salad Sandwich. But this Coronation Chickpea Sandwich is my new favourite!

Coronation Chickpea Sandwich

Let’s take a moment to rewind a little bit through history to give any people who don’t know a little history lesson about the OG Coronation Chicken Sandwich. Word has it (or Wikipedia tells me) that the original chicken sandwich was created for the Queen herself to serve at her Coronation banquet. Ever since then, it’s been a British favourite!

Vegan Coronation Chickpea Sandwich

Move over Coronation Chicken… Coronation Chickpea Sandwiches are the future! Lightly spiced and creamy with pops of fruit, this sandwich filling is simply delicious!

Ingredients
  

  • 400g tin of Chickpeas drained
  • 1/4 Red Onion diced
  • 1/3 cup Raisins or Sultanas
  • 3 tbsp Vegan Mayonnaise
  • 2 tsp Mild Curry Powder
  • 1 tbsp Mango Chutney
  • Salt & Pepper to taste
  • Sliced bread to serve

Instructions
 

  • In a large bowl, lightly smash the drained chickpeas with the back of a fork.
  • Add the remaining ingredients – diced red onion, raisins, vegan mayo, curry powder and mango chutney.
  • Combine everything really well. Taste and season with salt and pepper as desired.
  • Spoon the mixture onto your sliced bread and then serve it up!
