Sticky BBQ Tofu Sub

Lovely sticky, smoky tofu on a toasted baguette with fresh salad. Yum!

Ingredients
  

BBQ Spice Rub

  • 1 tbsp Smoked Paprika
  • 1 tsp Garlic Powder
  • 1/4 tsp Ground Cumin
  • 1/4 tsp Pepper

BBQ Glazed Tofu

  • 1 Block of Extra Firm Tofu
  • 1/4 cup Tomato Ketchup
  • 2 Shallots finely diced
  • 2 1/2 tbsp Light Brown Sugar
  • 2 tbsp Rice Wine Vinegar
  • 1 tsp English Mustard
  • 1 Garlic Clove minced
  • 1/2 tsp BBQ Spice Rub
  • Pinch of ground cayenne
  • Pinch of black pepper

Sriracha Mayo

  • 2 tbsp Vegan Mayonnaise
  • 2 tsp Sriracha

To serve

  • Baguette
  • Julienned Cucumber
  • Cucumber
  • Lettuce
  • Sriracha Mayo

Instructions
 

  • Press tofu using desired method - (I wrap mine in a towel and then place between two chopping boards with a cast-iron skillet on top and leave for at least 20 minutes.)
  • Mix all the dry ingredients listed under BBQ Spice Rub.
  • Place all the BBQ glaze ingredients into a pot and bring to boil over medium heat (it smells so delicious at this point!)
  • Decrease to a low heat and simmer gently for 15-20 minutes.
  • Set aside the sauce to cool slightly before using an immersion blender to make a smooth glaze.
  • Preheat the over to 200 degrees celsius and prepare a baking sheet with baking paper.
  • Slice the tofu into strips. Rub the remaining BBQ Spice Rub over the tofu and then place on the baking sheet in the oven - bake for 25-30 minutes, flipping halfway through cooking time.
  • Remove the tofu slabs from the oven and then coat in the BBQ Glaze.
  • Place tofu slabs back in the oven for a remaining 5-10 minutes until nice and sticky.
  • Brush the inside of your ciabatta buns with sesame oil and place under the grill for a few minutes, or until desired toastiness.
  • Assemble your sub with BBQ Glazed tofu and desired filling!
